What makes you, you?

My kids make me, me. They are the reason I wake up way, way to early every day. They are the reason I get out of the house to go on different adventures, learn history, and learned I am really bad at math. God gave me my kids to make me a better person and get closer to God. Because Lord knows I need him and praying for him to help me with my kids.

Describe your experience at CFNC.

My experience has been really good. I have made a truly great friend, Sara. I like to see the determination she has to get better in the movements and practicing double under. I love to see her beat Orlando. I love to see Molly practicing handstand walks and see the great progress she is making. I’m so happy for them. I love to talk to Catherine and Guy. They are really great people and give great advice. I also really love to beat Rob in running wods.

What are your major life goals?

Major life goals have really changed for me, going through the pandemic has really made me realize that I need to live life to the best every day. I need to be a good mom and let go of little things that don’t matter. I want to raise my kids to be really great people. Also, graduating college with 2 degrees.

What are your 3 major CrossFit goals?

Ring muscle ups, handstand walking, butterfly chest to bars.

What has been your favorite CrossFit moment so far?

I love to see people PR their lifts, get their first double unders, pull ups, etc. I love to see people achieving their goals. But I love to see Sara and Orlando competing; it’s so funny. Then Rob trying to catch up to me running.

What has been your favorite CrossFit WOD and why?

Hero wods. DT, Murph, etc. They mean something and honor people.

Where do you see yourself in 5 years?

Hopefully living in the best state, Texas, in our forever home, hopefully close to the beach.

Salsa and chips while cooking

Salsa

4 large tomatoes

1 avocado

1 large sweet onion

1 large orange and yellow bell pepper

1 cup cilantro

½ tsp. ground black pepper

2 Tbs. lemon juice

½ tsp Celtic or Himalayan sea salt

Cayenne pepper, to taste

Turkey Enchiladas

1 lb. lean ground turkey

1 cup chopped onion

1 cup chopped green bell pepper

3 cups fresh spinach

8 large whole grain wraps

1 12 oz can enchilada sauce

2 cups shredded 2 % Mexican cheese, divided

1 cup veggies only chunky salsa

1 cup chopped tomatoes

1 cup shredded lettuce

Handful cilantro

Instructions

· Cook the ground turkey with onion and green pepper, adding spinach in the last minute of cooking

· pour the whole can of enchilada sauce into a wide shallow bowl

· dip each wrap in the enchilada sauce- you want to reserve as much sauce as possible in the dipping bowl, so use your fingers to scrape off excess after dipping

· lay wrap down on a plate, and spoon in 1/8 the cooked turkey with veggies

· sprinkle with 1/8 cup cheese

· roll up and place seam side down in a greased 13x9x2 pan. Pack tight

· pour remaining enchilada sauce over and sprinkle remaining cheese

· bake 375 20-30 mins.

· top with salsa chopped tomatoes, shredded lettuce and cilantro

What is your favorite cheat meal?

Any kind of dessert. Chocolate, cakes, pies, donuts, ice cream. etc.

What is the most challenging aspect of CrossFit?

Most challenging aspect is knowing you are putting in the work by practicing, training and not being able to see the results you want. Learning that everything takes time and you need to be patient.

What advice would you give to someone new to CrossFit?

My advice would be to talk to people. Ask for help. Everyone will talk to you and help. Show up every day and give 100 percent.
